I made smashed lentil tacos and wow they were great! First I sauteed finely diced onion, red pepper, mushrooms and garlic. Then I combined them with a can of lentils, taco seasoning, ketchup, light soy sauce and blended oats. It looked very much like taco seasoned ground beef. Then I formed a ball of the lentils on the wrapped and pressed it until flat, then cooked in a fry pan on both sides. I made a dip it was an avocado, plain yogurt, cloves of garlic, lime juice and parsley. Blend until smooth. Full of flavour, extremely light on the wallet and I'm looking forward to having these again soon.

Made Napolitano style pizza dough for pizza night at home. The closer pizza has a pesto sauce with bacon, tomatoes and mozzarella. The further one is a simple tomato sauce with ground beef and sausage, tomatoes, mozza and topped with basil

Reverse seared ribeye, oyster mushrooms, edible flowers. Fondant potatoes with crab and herb salad on the side.

Left it to cook in the oven for hours. It was absolutely delicious!

I recently purchased a Crimpit, and I really love using it. You put a tortilla in it, fill it, crimp it, (optionally) cook it, and eat it. This was my breakfast today.

I got some Toufayan brand tortillas on sale at Publix, and they’re my new favorite. They’re really soft and work better in the Crimpit than the cheaper, stiffer ones. I cooked scrambled eggs in the microwave with a little Tabasco sauce. I put the eggs on the bottom, covered them with plenty of Mexican blend cheese, a piece of cooked jalapeño bacon from the meat market on top of that, and finished it off with some sliced fresh tomato. I crimped it, put butter on the outside of the tortilla, a little more Mexican blend cheese on top, and cooked it in the air fryer at 350 degrees for 8 minutes.

I made an extra one and put it in a Ziplock, so I’ve also got a delicious breakfast for tomorrow to start the week!

Made in my conventional oven, 550F for 11 minutes, using a pizza stone. Pineapple, jalapenos, pepperoni, and some pineapple/jalapeño hot honey for toppings. Recipe for the dough.

Made some 48hr pizza but only had time to let it rise overnight. Still one of the best pizzas I ever had. The dough is just amazing. Even had a friend try making it today and he said it was so good he basically vacuumed it up.
