I am set up on gram.social. How do I connect to other Pixelfed servers?

You might be lucky that someone in here knows how to do it, but it will probably be faster if you post your question/s about Pixelfed in the Pixelfed community.

You automatically are ๐Ÿ˜Ž That's the magic of federating.

You can search and follow users from other PixelFed (even Mastodon!) servers in same / similar way as users on gram.social. I am on gram.social too and I hardly know whether some user is even on PixelFed ๐Ÿ˜‚

Not really. I just connected for my account on gram from a local server, but I can only one of my posts. Same with an account on the local server. I see less posts on gram.

What you are talking about may be because most fediverse platforms only propagate posts to instances after someone from that instance has subscribed to the user and there is no backfilling of older posts once someone does subscribe. You'll see everything after that though.

If you find someone you want to follow, you put in their entire username in the search bar.
