Something that will chop vegetables for soup. Ideally something high quality, so I don't need to replace it for a long time

Magimix are French, and may be the high-quality product you seek.

I upgraded from a Kenwood which was good enough, but the upgrade to direct-driven and an induction motor was substantial (as is the weight of the unit).

Their commercial products are sold under the name "Robot Coupe", I see those show up used from time to time (usually when a restaurant goes out of business) so that could also be an option.

I own a couple of commercial appliances and I've never had to replace any of them. That said, if you use it daily then you're going to want to get the blades sharpened every 9 months or so. Blade sharpeners are still a very common profession, most salons and such will know where to send them.

Your budget is probably somewhere below $600, right?

I don't have one as I found myself locked in the KitchenAid mixer ecosystem since buying one, but I've been intrigued by the Ankarsrum mixer and series of accessories. It's quite an investment and beyond your desire for a food processor, but perhaps it solves multiple problems (like having too much money in your bank account).

My wife and I are getting an Ankarsrum, once we've finished renovation the pantry. Can't wait!
