Because when you work on a farm for yourself, you keep 100% of your work. When you work for a company, it keeps most of your work for itself and gives you some compensation in return that depends on a combination of "how much do you need for living" and "how easily could you find another job".
You cant have high humidity when its cold, doesnt depend on the location.
100% humidity at 0°C is ~20% humidity at 25°, which is pretty dry.
