I've played through both. The switch versions are very faithful to the originals, with a few things that stood out to me as different:

The bikes are implemented differently, so some of the bike puzzles can be easily cheesed.

Fairy type is present.

The underground has been redesigned to focus on catching Pokemon instead of multiplayer.

Elite 4 rematches are much more difficult.

There are a variety of small improvements throughout the game otherwise, so I think it would be fine to play these ones. If you want to experience both versions of gen 4 in some way, you could also play Platinum on the DS.

The Talos Principle. After a short bit in the game, you go to a hub area that goes to other areas like the one you just came from. Eventually, you find out that there is another hub area above this which leads to other hub areas. I didn't remember if there is another layer on top of that, but either way, once I hit that second hub layer, I remember realizing that the entire game was multiple times larger than I had thought, and I had no way to know if it would expand again when I made it to the next area.
