Carrying some sort of pump is a good idea, but I opt for a hand pump because I don't trust the battery to keep a charge in those little electric pumps and most of my tires aren't very high PSI

ABUS, Skunklock, and Litelock also make good Ulocks.

My personal favorite is the Skunklock Chemical but it's very heavy. Better for ebikes or maybe moto.

I just use one: A skunklock chemical but I also ride a shitty ebike and live/work in areas where theft isn't as huge a problem. Plus I usually lock up in areas I can see so if someone tries anything I can always stroll up and... discourage them from doing something foolish that will result in their embarrassment or injury.

Personally: I don't trust them to make a laptop, so I definitely don't trust them to make an ebike.

Rural micromobility options exist but they're more on the end of motorcycles, ATVs, snowmobiles, horses, etc.

There are probably ebikes out there that could do it too, but just barely I'd imagine. That said, a MTB would be just fine for getting around a small farm or homestead.

It's largely like this where I live and I just ride my bike/ebike like a car. I'm fortunate enough to live in a place where I can mostly get around on streets that aren't super fast, but when it gets sketchy I'll just walk my bike on the sidewalk or even ride if it's not crowded (not technically legal, but nobody cares as long as you aren't being an idiot about it). Alternately, I skate on the sidewalk or side of the street but I prefer bikes.
