The origins are unclear. The Danish bakers stole the recipe for soggy cakes from Vienna, hence the name, but then the Austrian bakers startede calling it a copenhagen plunder. Immigrants brought the cake to America by the name danish.

Technically the whole range of similar cakes are neither cakes, bread or pastry. They're viennoiseries, which is layered dough, just like croissants.
