From first hand experience, groundhog tastes fucking amazing. Literally #2 spot on my personal list of favorite meats, right after minke whale. Just make sure it's cooked well done so you don't risk getting parasites. And if eaten, it's not just payback for destroying my garden, I'm actually getting some of those garden nutrients back.
