For the pancakes: • 100 g (3 ½ ounces) fresh spinach • 200 ml (¾ cup) oat milk or water • 100 g (¾ cup) chickpea flour • 50 g (½ cup) oats, finely ground • ½ tsp baking powder • 1 tsp lemon juice • ½ tsp salt • ½ tsp cumin • 1 tbsp olive oil for the pan

For the white sauce so I used mashed potatoes instead thinned out with soy milk and it came out great.
