Very nice oven rise. For 2 loaves

1kg flour, 30% white whole wheat, 70% white bread flour

20g salt

700g cool water

200g levain

Mixed all, some stretch and folds, bulk rise, shape and rest overnight in fridge. Bake at 450f in preheated pans (almost - someone turned off my preheating oven so they started a little lower) 25 minutes in closed pan, 25 minutes uncovered but loosely tented with foil.

I would like to touch that bread

the cut on the right loaf could've been a tad deeper

Agreed and I would have removed the lids earlier if I'd known they wanted to rise past the pots. It was pressed against the lid of the orange pot.

They look delicious.

What is white whole wheat flour?

[–] RBWells@lemmy.world 3 points 1 year ago

Whole grain flour from a different variety of wheat that has grains lighter in color. I like it, King Arthur makes some and it's hard to find, but I ordered 10 lb from Target, they had it.
