It is funny and in Poland we still laugh bout it but the "everyone can see what horse looks like" was just the beginning of a very long definition. It meant "I'm not going to describe what a horse looks like. Just look out a window and you will see one".
With the salt, pepper, and third shaker thing, I like to believe there was just no widespread agreement on what the third default seasoning was, so they left it up to discretion.
You wanna put some paprika in there, go for it. You'd rather have ground parmesan, be our guest. Maybe some coffee, or straight cocaine. It's your shaker.

Funny, for us pepper is on the table but it’s not second on the list. It’s salt, then olive oil, then lemon. And then pepper.
So my guess would obviously be oil. Why the fuck would sugar be there.
Also if this is about the ancient Mediterranean then pepper was actually long pepper which tastes like dirt and the third thing was likely Garum, which Internet pop history doesn’t shut up about.
The classic settings have three shakers and two bottles. They were used for oil, vinegar, salt, pepper, and... something solid most likely. Here's what they look like:
Lemon ≈ vinegar, okay, neat.
If this was the house I grew up in the shakers may have been salt, black pepper (we called it spicy pepper), and allspice (which is called sweet pepper in Arabic).
The problem here is that it just says “European” and I haven’t read what I certainly think the book the OOP mentions (A short history of nearly everything) in well over a decade so I have no context for where this area might be. Or when that area might be. Eastern Europe in the mid 1800s? I’d assume paprika. Andalusian Iberia at its peak? I’d assume something completely different.
If I had a third shaker it would probably contain dried mint for salads.
It's a different book. I'm pretty sure it's called At Home. It's a much more recent book than A Short History Of Nearly Everything.
