Smoking season has begun for me. Smoked queso, Velveeta, cheddar, gouda, onion, jalapeno, rotel, sausage.

The sausage is cooked and than all of the ingredients are added to a pan and put in my smoker. Since the sausage is precooked all I am looking to do is soften the veggies, melt the cheese, and get smoke to infuse. I put a pan of this in the smoker when I'm doing something else just to get the flavor.

How do you go about smoking the cheeses?

This looks like it's heated, but most of the time cheese is "cold smoked." The box with the burning wood is separate from the box with the things being smoked, with a connection between them for the smoke to go through. There are smokers made for the purpose, but people also do things like this:
