it makes sense to me; you rest at the end of the weed and start the next day with work
But here you get rest at the end of the week and start the week with rest.
It originates from sabbath being the seventh day of the week. My guess is that at some point it was made into a two-day feast and then it became more convenient to start counting the week from the first working day.
