I am a cook that normally uses a lot of spices in cooking, but when I make hash browns I only salt them, adding pepper on the rare occasion.

If you do season them, what seasonings do you use? And do you add it before, during, or after cooking?

Salt, pepper, garlic, onion powder (or razor thin shredded onion fried in with then). Adding the seasonings as its cooking to mix in well with heat.

I use hash browns as filler for breakfast burritos for the kids, so I usually go with light salt and no pepper. I let the other things in the burrito (bell peppers, mushrooms, eggs, cheese) do the heavy lifting for flavor and then I add hot sauce when I eat them.

When I eat hash browns by themselves I drown them in ketchup, so I'm not a big pepper in hash browns guy. If I wanted an interesting spice profile for them, I'd probably use za'atar or spike.

I haven't made hash browns since I learned how to make latkes, but it's still just a salt n pepper kinda situation. Some recipes say to cook hash browns in clarified butter. I imagine that's pretty flavorful too.

One tip I have for hash browns (or latkes) is to use a potato ricer to remove water from the shredded potatoes. This is easier, faster, and more effective than the dishtowel method.

Salt, pepper, crushed red, and paprika. Every time. I add it during cooking. Crushed red goes first into the oil to infuse. Then the potato, then the rest of the spices. Can't say I make hashy browns often though, couple times a year. I just like the red spices. A lot.

I like soaking my potato shreds in cold water with salt and onion slices. Pre-season.

Then I add salt, pepper, and more onion powder. For an added kick, use lard (animal if you're able to, but vegan lard also works if your diet requires.) to cook the hash browns for extra crunchy and flavor.
