I must be odd. The only thing I'm noticing out of place is the wooden cock and balls top left.

I'd keep it as it is and complete work on it ... then gift it to someone you want to torture.
Nothing like having something that is beautifully made with one fatal flaw on it.
Personally, I wouldn't mind having the completed product. It would drive my visitors insane in the kitchen or dining table as they saw this beautiful piece of woodworking and then a break in the pattern.
From my point of view, I would love to have something like this around. Everything, everyone wants to make and manufacture is always designed to be 'perfect' or 'symmetrical'. Having something like this with a pattern flaw would make it extremely unique and special.
Would you remember 100 perfectly made cutting boards .... or that one board with the broken pattern?

If I was keeping it for myself I would have considered keeping it as is. Reminder to pay attention even on the 5th panel glue up of the day. This one isn't for me though.

Making them the new edge boards wouldn't really help anything, in order to prevent blow out while planing the surface I put a chamfer around the outer edges with a block plane. To get rid of that I'd have to joint off about 1/16" from each side anyway. 1/16" isn't visually much over 1 3/4"

I got the pattern wrong between the 4th and 5th rows from the left. The joints should be staggered.
I’m a knitter and I understand you can see things I can’t. 😁
I admit it's a little difficult to see in this shot because of the lighting but once the finish went on it would be very obvious. It'd be like <><><<><>. I didn't notice until I got part way through sanding it and the joints started to show.

If you saw it in half and leave the sawed-off surfces on the outside nobody will be able to notice that they're slightly narrower.
