If their meat prep was worth a shit they wouldn’t need sauce anyway.

I've always heard this from inferior BBQ styles.

NC has a "whole hog" style, but the sauces are the real difference.

Eastern NC is vinegar and peppers. Western NC is vinegar and peppers and ketchup. South Carolina is vinegar and peppers and mustard.

You see the difference? That's why NC has an official Eastern and Western style whole hog bbq.

The problem is the vinegar. That's not BBQ sauce, it's salad dressing.
