I mean which pronunciation is considered the “hard C”? Is it the one that sounds like s or the one that sounds like k?

The "k" sound is the hard "c" :)

Thanks. The “hard” / “soft” terminology has never made sense to me, it’s always felt very arbitrary as to which is which. Also useless in the explaining the correct pronunciation of “gif”

English is a silly language. And you're right i don't know of any rules, asides from it just being innate I suppose!
