There is a deleted scene in the film where they discuss replacing Truman. Basically they bring in a new "Truman", film both of them, then the original Truman dies, and the show only follows new "Truman".

I assume if Truman were heading down a path where he needed to be replaced they'd do something similar.

They do actually nearly kill him in the movie. Paul Giamatti's character protests about this and refuses to cooperate when Ed Harris' character wants a full-blown hurricane at sea to try and get Truman to comply
