For the same reason employers don't pay their employees in nfts/gold bars/slices of ham...

Every single expense the employee has, from bills to groceries to rent has to be payed in real money, not random crap... and it is really inconvenient to have to sell whatever random crap your employer decided to use, especially if it is "volatile" and can be worth half it's value by the time rent is due
