I have a few devices that I can get into but haven't been able to find out which chip does what. Any tips?

Google whatever is printed on the chip.

Also learn the basic components of any system, and which components each device would need.

I found that chatgpt is really good at telling you what is a component by just telling it the part name, it can be a bit quicker than looking for the datasheet
