Thank you very much! I’m glad that you found it informative.

Hell yeah, I'll have to try this. Do you put a tray of water in with it for the first half of the bake, or just let it ride? Also does it still take roughly 50 minutes?

No steam needed. It took me a while to develop this recipe. It’s so popular that I’ve made 8 loaves this month to give as holiday presents.

This will make two loaves.

Start with a Levain of 50/100/100

900g bread flour

400g buttermilk

Water 100g

20g salt

50g granulated sugar

110g butter

(I’ve found that there are different times of the year where I need to add more water than what I put up in the recipe, so you’ll have to play that by ear.)

Bake at 350°F for 45 minutes. Bread is done when it has reached 190°F.

As I said before, no steam is needed. The crust comes out nice and soft.

If you want a really soft version of this bread that is great for toasting and making grilled cheese sandwiches, you’ll want to check out this recipe here… https://mrfunkedude.wordpress.com/2023/10/17/sourdough-buttermilk-sandwich-bread/

That’s another recipe that I developed.

Enjoy!

Thanks for the video.

I wanted to say, I think (not certain), there is a way to link your peertube videos with your Piefed/Lemmy posts, so that the upvotes transfer to thumbs up on peertube and vice versa.

It looks like The Linux Experiment (Peertube) has it set up and works. That maybe an RSS feed though.

Edits: Figured out how to link their peertube page and Lemmy/Piefed community:

Enjoyed your relaxing tones, great video, thanks for creating and sharing with us.

I did wonder what you greased your pans with?

A flour based cooking spray. Works great.
