They may have guessed 's' but 's' isn't in the answer. So they know it isn't the answer all us degenerates guessed by seeing the picture with no context.

That's what I was saying. Although it would be equally unlikely they hadn't guessed "r", which would make the first comment wrong.

The number of contestants that don't start with the most common letters is surprisingly high.

Absolutely true.

It’s even more surprising when you realize that all you have to do to know the most common letters is just watch a single episode all the way to the end.

For the last puzzle they always start with “r, s, t, l, n, and e” revealed.

It wouldn't surprise me if producers ask them to not always go with the most common letters at the beginning, to make the game more interesting.
