I used to do that. It's as choreographed as any other stage show. More so due to both safety and the need to improvise occasionally.
That sounds like the only logical explanation of what I see in this short video.

The jousting part is harder to “script”. You can really only script hitting each other. From there it’s real jousting. It’s really hard to aim specifically with a big wooden lance.
You can choreograph the melee dial after the jousting though.
