I've never played KOTOR, but I've heard really good things about it. Do they still hold up for older games?

KOTOR 1 holds up absolutely, just plug and play.

KOTOR 2 was rushed out of development, so the Restored Content Mod is widely considered required by the fandom. Otherwise, it is a very good game and has an interesting take on the force and look at the politics of Jedi.
