Why do people praise has for being so quick to get hot then? I guess maybe for more precise things?

A stove should have range. Boiling water is testing the top of the range. Gas is also worse at simmering. Resistive electric delivers much more consistant low heat than gas.

So gas is the worst at the top, but also, it excels at being the worst at the bottom.

Because they're ignorant? I mean, the flame is hot, but it has shit thermal mass and takes far longer to heat anything with mass.
