I'd think the biggest issue would be structural instability just before the flared bit, as carrots are quite brittle.

my thoughts exactly, better use some wild carrot type genetic stock to add back in more fibrosity. The beet should help a bit with that as well, perhaps a dash of Yucca/Cassava might help?
