Well, my example was someone who claims to be a vegetarian and eats steak.

And I do get to infer someone's sincerity based on whether they contradict themselves to that degree.

Christianity is a pile of contradictions. If that's the bar no one's a Christian. Turns out if you choose to believe something based on faith despite all evidence you're gonna find yourself with some weird company. If that makes you uncomfortable then you might just be on the path to joining reality.
