federated: Describes a system that works like email. Users join servers, which talk to other servers and allow their users to talk to each other.
instance: One particular server. I'm using Lemmy.ml. Your instance is lemm.ee
defederated: An action a server can take to stop talking to another server, preventing its users from interacting with the defederated server.

Hope this clears some stuff up.
