Animal science I get, but why do engineering students need them?
In case they encounter any architecture students.
And need them for dancing at each other?
For stripping wires, making small modifications to 3D prints, cutting tape, etc
They just think they're neat. :)

it's for threatening slow walkers who are blocking the way from the eng students' fifth to sixth lecture of the day across campus after getting out of a 2 hour shitty lab period
Probably for cutting boxes and opening bags. You never know what you might need a knife for until you do.
