Not sure why this is necessary for Plex users tho, since Plex can make this playlist with its own tools.

It may not be necessary, but I assume it is less work. Even if the tools to create a playlist exist in the default UI, running that script is hypothetically basically just a one-click "make a Stargate playlist" button, which sounds like it would be less effort than using the default Plex tools to do so.
