You don't realize it because that requires thought, which occurs across time, which you just stopped.
I.e. you dont notice. Nobody in the universe does, unless tuey have the time gem. You just snap your fingers and it restarts if/ when the effect wear out.

I actually think about this a lot. I'll have a brain glitch or something and wonder if it was a time controller stopping and then continuing the moment. Then i think about if i would notice it at all. Etc. etc.
If it was a time stop with nothing else with it, you wouldn't be able to notice, since just nothing would exist until things continue like nothing happened. You can argue that a true time stop wouldn't happen at all, since it takes no time
