If you really want to get them going, mimic their excited pose:

Drop to your knees, splay out your arms the way they do with their forelimbs, keep eye contact with them, neck up.

They will go bananas.

(Of course, only do this with a dog that knows you well and trusts you, otherwise it may be interpreted as threatening/aggression)

Used to have a senior dog who had mostly outgrown frivolities like fetch and tug-of-war. But she would still sometimes forget herself and launch into a few seconds of zoomies if I did this to her while she was sniffing around the back yard!

Getting a cranky stubborn dog to mirror you and drop into that play pose never gets old :)

You don't have to drop to your knees. Just go into a semi-crouching stance and spread your arms.
