Looks great, something I struggle with when doing fried rice- how was the rice treated before the fry? Was it cold leftovers or freshly cooked?

It was cold. I made extra rice last weekend just for the purpose of using it for fried rice tonight.

Rice is easier to fry when it has less moisture in it. Thats why so many use leftover rice to make it.
