I ended up using Cream cheese and I added some Vanilla extract and some nutmeg. I would be curious about some chocolate powder as well. He focused on historical accuracy, and I was thinking those spices all go well together.

this was for a halloween party. I hardly ever cook with pumpkin!

I wasn't a fan of the texture. It didn't actually have any flour. It was more of a puddling, with a wobbly center. The party guests loved it, none of it survived to be leftovers.

Pumpkin tofu is a thing, and tofu can stand in for cheese in some recipes!

Tofu can substitute pretty much everything. I myself love me a good tofuque monsieur, which is a good old ham and cheese toast only with tofu instead of the cheese, ham and bread.
