Not an e-ink watch, and never was, they use Sharp or JDI Memory LCD's which, as the name suggests, are Liquid Crystal Displays, just ones that draw a very tiny amount of current when displaying a static image.

Always-on e-paper screen (it’s reflective rather than emissive. Sunlight readable. Glanceable. Not distracting to others like a bright wrist)
